Vegan Tikka Masala & Moroccan Couscous.

Homemade Tikka Masala.
1. Sauté red onions and tomato.
2. Spices: garam masala, red chili, paprika, cinammon, cumin, garlic, ginger, and black pepper.
3. Add in coconut milk and lime.
4. Let simmer for the flavours to come together.
5. Blend into smooth consistency.
6. Serve tikka masala with roasted veges. I roasted cauliflower and bell pepper.

Vegan Moroccan Couscous.
1. Mix everything in a bowl: dried couscous, raisins, garlic, cumin, turmeric, black pepper, cinammon, cilantro, and lemon juice. Using english and chinese parsley as I don't have cilantro.
2. Add in hot water and let sit for 15mins.
3. When couscous is done with the waters absorbed, fluff it with a fork.
4. Mix in roast veges, chickpeas, grated carrot, cilantro, mint. I roasted red bell pepper, red onion, and Japanese cucumber.
Topped with avocado and garnished with parsley and toasted sesame seed.
