Vegan Katsu Curry

1. Sauté banana, carrot, red onion, chopped tomato, red chili.

2. Spices: curry powder, garam masala.

3. Add water.

4. Cook until everything softens.

5. Blend till smooth.

Served mine with udon noodles this time, also some baked sweet potatoes, pumpkin, and tempeh. Noodles can be swapped for rice too.
