Vegan Curry Lentil Dhal

1. Sauté red onion, red chili, garlic, ginger.

2. Spices: garam masala, curry, also added more cumin seed and some black pepper.

3. Add coconut milk and water. Also added curry leaves here.

4. Add tomato, bell pepper, and sweet potato. I use orange sweet potato here.

5. Add soaked lentils and cooked chickpeas.

6. Let simmer until sweet potato softens and lentils are cooked.

7. Few minutes before it's done, add veges of choice. I used cauliflower and okra.

8. Add lime juice when it's done.

9. Serve up with rice or noodles of choice. I used flat rice noodles here.

10. Garnish: toasted coconut flakes and toasted sesame seed.
