Vegan Christmas Recipe -> Homemade Vegan Lentil Loaf

Green lentil. Oat flour, just blend rolled oats if you don't have oat flour. Walnut, chopped to pieces instead of blending this time for that crunch. Frozen peas. Celery, carrot, onion, half tomato, water sautéed. Bbq sauce. Tahini. Flax seed. Thyme. Cumin. Garlic. Tomato and bbq sauce on top.

1. Cook soaked lentils of choice. (original recipe calls for brown lentils, but I only had green)

2. Saute vegetables: Onion, Celery, Carrot, and Tomato.

3. Dry ingredients: Oat flour. Walnuts. Frozen peas. Flax seed.

4. Wet ingredients: Sauteed vegetables, BBQ sauce. Tahini.

5. Seasoned with: Thyme. Cumin. Garlic.

6. Mix all the ingredients together and place in a baking dish.

7. Brush the top with some Tomato sauce and BBQ sauce.

8. Bake for approximately 45 - 60 minutes at 180 degree celsius. If it gets to brown on the top, cover baking dish with aluminium foil halfway.

Left mine for about 50 minutes at 180 degree celsius. Second attempt while I still have the ingredients. Made it less wet this time, turns out lesser too somehow hmm. A loaf this time yay, more crust on the edges. Spared myself with the sauces too this time. . Some kale salad at the side too, not so lonely this time. Steamed corn. Cherry tomato. Home pickled cucumber. Vegan mayo with tahini, leftover. Could actually do without the sauce.
