Ultimate Chili 'Con Carne' & Guac.

1. Sauté red onion, garlic, red chili.

2. Spices: cumin, cayenne.

3. Add roasted pulled king oyster mushrooms. Pull into strip before baking for 20mins at 180 Celsius.

4. Add bell pepper. Used red and yellow bell pepper here. Also added jalapeño pepper.

5. Add baked pumpkin. Baked for about 15mins at 180 Celsius.

6. Add chopped tomato.

7. Add black and kidney beans.

8. Add cinamon and cacao powder. Used 1 tbsp of cacao powder (yes the only one I measured lol).

9. Let simmer for about 25mins for the flavours to cook through.

10. Garnish: lime juice, cilantro and toasted sesame seed.

Served mine with some quinoa, homemade guacamole, and tortilla chips. Toasted the tortilla slices for about 5mins at 160 Celsius.

Homemade Guacamole

1. Mashed avocado, de-seeded tomato, red onion, lime juice, cilantro.

2. Mix everything together and enjoy!

I served my guacamole with some homemade chili and tortilla chips yums.
